Le Manoir aux Quat'Saisons
Church Road, Great Milton, Oxford OX44 7PD
Just south of Oxford is Great Milton, a village that's home to 16th-century cottages, a 13th-century church and a two-Michelin-starred restaurant. Raymond Blanc's Le Manoir is famed for its modern French food: try the soft poached gull's egg with white asparagus and bacon, loin of lamb with sweet garlic puree, and duck breast with jasmine tea and raisin sauce. Waiting lists for the restaurant are long, but diners who stay at the hotel are automatically booked in for dinner. Each room has its own style – our favourite is the converted 15th-century dovecote, built between the main house and the courtyard, which has views over the grounds.
The French Horn
Sonning-on-Thames, Berkshire RG4 6TN
The French Horn is just a few miles west of London, but the serene gardens of this former 19th-century coaching inn are a world away from the capital's bustling streets. Built on the banks of the Thames, with many of its rooms overlooking the river, the family-run hotel serves fine French food, such as quail stuffed with foie gras, lobster salad and caviar. The signature dish – roast duck cooked on the spit in front of the open fire in the restaurant's bar – is not to be missed. The hotel is a good base for the golf courses at Sunningdale and Wentworth, Royal Ascot and – for guests with young children – Legoland.
Sat Bains
Lenton Lane, Nottingham NG7 2SA
Chef Sat Bains' eponymous restaurant holds the only Michelin star in Nottingham. It has seven boutique bedrooms and serves a selection of tasting menus that feature innovative dishes, such as salmon with oyster emulsion, duck with beetroot ketchup and wild brill teamed with Hereford snails. Best of all, with 48 hours' notice the kitchen will create a bespoke tasting menu according to diners' favourite ingredients. Lifestyle manager Sophie Johnson says: ‘They prepared some freshly made gluten-free bread at my request, and there aren't many restaurants that would have done that, no matter what the Michelin rating.'
Swinton Park
Masham, Ripon, North Yorkshire HG4 4JH
The kitchen at Swinton Park castle sources ingredients from its 20,000-acre estate, which stretches from the River Ure in Wensleydale up to the moorland Dales. The seasonal menu features venison, rabbit, smoked trout and game, as well as vegetables and fruits that are grown in the kitchen's huge walled garden. Each of the rooms has its own design and there's a spa and a cookery school so guests can keep themselves occupied between meals.
Purple Carrot at Lewtrenchard Manor
1 Woodlands, Lewdown, Okehampton, Devon EX20 4DS
A chef’s table experience with a difference can be found at Lewtrenchard Manor’s Purple Carrot restaurant. A group of up to eight will be welcomed in their own private dining room by chef-patron Jason Hornbuckle, who then gives an explanation of the menu and the ingredients he uses before heading off to prepare the food. Diners can then watch live CCTV-style footage of the kitchen on a large screen, with Hornbuckle providing a running commentary on his cooking. His seasonal menu brings the English countryside into the kitchen, with almost all of the ingredients coming from the manor’s grounds.
Andrew Fairlie at Gleneagles
Auchterarder, Perthshire PH3 1NF
Andrew Fairlie’s two-Michelin-starred restaurant at Gleneagles rivals the hotel’s golf course in attracting visitors from around the country. Having trained in the south west of France, the chef’s cooking is a unique blend of French and Gaelic cuisine, taking classic dishes and applying a Scottish twist to them – such as his signature lobster, where the shell is smoked for 12 hours using wood shavings from whisky barrels.
